Potato Pancakes with Boursin Garlic & Herbs
Yield:16 Small Cakes

Ingredients:
2 large Russet Potatoes, grated, about 1 1/2 lbs.
1/2 small Spanish onion, grated
2 Eggs, beaten
4 Tbsp. Flour
1 Tsp. Salt
1/2 tsp. Pepper
1/2 cup Vegetable oil
1 pkg. Boursin garlic and herb cheese
2 Tbsp. Sour Cream
2 Tbsp. Chives, chopped


Directions:
1.  Mix grated potato, onion, eggs, flour and seasonings together.  Form into small pancakes about 2 inches in diameter.
2. Heat vegetable oil in a sauté pan and fry pancakes a few at a time, until golden brown on each side.  Let pancakes drain on paper towels.
3. Stir Boursin and sour cream together.  Serve pancakes with a teaspoon of cheese mixture on top.  Garnish with chopped chives.
