Balsamic Roasted Pears Stuffed with Manchego Cheese
Yield: 6 servings

Ingredients:
6 Bartlet Pears, peeled and core removed
3 Tbsp. Butter, melted
3 Tbsp. Balsamic vinegar
3 oz. Manchego cheese, coarsely chopped
3 Tbsp. Honey
6 Tbsp. Walnuts, toasted


Directions:
1. Preheat oven to 350ºF
2. With a pastry brush, spread 1 tablespoon melted butter in 8" square baking dish.
3. Arrange pears standing up and brush with remaining butter.  Bake in center or oven for 1 hour.  
4. Baste pears with juices occasionally. Cover pears with aluminum foil for the last 10 minutes of baking. 
5. Remove pears from oven and let cool completely.
6. Stuff the pears with cheese and glaze with balsamic vinegar, return to 400ºF oven and heat for 5 minutes.
7. When ready to serve, drizzle pears with honey and garnish with toasted walnuts.
