Pork Loin with Fruit and Muenster
Yield:  8-10 servings

Ingredients:
3 lb. DFS pork loin, split
2 Tbsp. DFS Vegetable Oil
1-1/2 DFS Sweet onions, chopped
2 cloves DFS garlic, minced
1 cup DFS apple, diced
1 cup DFS prunes, pitted, diced
1/2 cup DFS bread crumbs
1 cup ComSource Muenster cheese, shredded
1/2 cup Fisher walnuts, chopped, toasted
2 Tbsp. DFS fresh sage, chopped
DFS Salt & Pepper to taste

Directions:
1.  In a skillet over medium-high heat, heat oil.
2.  Add onions; cook 2 minutes, stirring constantly.  Add garlic; cook 1 minute, stirring constantly.  Remove from heat; cool completely.
3.  In a large bowl, combine onion mixture, apple, prunes, bread crumbs, cheese, walnuts, sage, salt, and pepper; mix well.
4.  Cover, then refrigerate until chilled.
5.  To stuff pork, lay loin out flat; spread stuffing over surface of meat.
6.  Roll up loin, jelly-roll style, enclosing stuffing.
7.  Tie securely with string; place in roasting pan.
8.  Roast, uncovered at 400ºF for 15 minutes.
9.  Reduce oven to 325ºF; add 1/4 cup water to bottom of roasting.  Cover, then roast 1-1/2 to 2 hours, until pork is thoroughly cooked and tender.
10.  Remove from oven; let stand covered for 15 minutes before slicing.
