| Sautéed Turkey Cutlets with Fontina, Sausage and Sage Dressing | |
| Yield: 8 servings Ingredients: 1 cup Bread cubes 8 Turkey cutlets, 1/3" thick 1/2 cup Flour 2 tsp. Thyme, fresh or 1 tsp. dried 3/4 tsp. Salt 1/2 tsp. Fresh ground pepper 1/2 cup Vegetable oil 1/2 lb. Sausage, spicy Italian style, removed from their casings 2 Tbsp. Olive oil 4 Tbsp. Chicken stock 1 Tbsp. Sage, chopped 6 oz. Fontina cheese, grated Directions: 1. Preheat oven to 350ºF. 2. Bake bread cubes in oven until well toasted. 3. Mix flour and seasonings together. Dredge cutlets in flour and shake off excess. 4. Sauté cutlets in hot oil until golden on each side and cooked through. Drain on paper towels. Place in baking dish. 5. Sauté sausage until thoroughly cooked. Mix with bread cubes and chicken stock so bread cubes absorb the moisture. Let cool. 6. Stir sage and cheese into bread cube mixture, and top turkey cutlets. Bake in 350ºF, oven until cheese is melted and turkey is heated through, about 15 minutes. |
